Earl Grey tea is one of the most recognized flavored teas in the world. It is a tea blend that has been flavored with the addition of oil of bergamot orange.

Bergamot is a citrus fruit with the appearance and flavor somewhere between an orange and a lemon with a little grapefruit and lime thrown in. The rind’s fragrant oil is added to black tea to give earl grey its unique taste.

For making this recipe, you will need to steep the earl grey tea in the hot cream mixture for at least 15 minutes. I believe that you can find earl grey in loose-leaf or regular tea bag form. Instead of using regular tea bags that can come in any size, I prefer using earl grey loose leaf tea. I need to measure the exact amount for the recipe, so I opted with using the loose-leaf.

  • If you plan to unmold the panna cotta onto plates, lightly grease the inside of the glasses with vegetable oil and use a paper towel to wipe out most of the oil, leaving only a light residue. Otherwise, you can leave them uncoated.

  • Soak the gelatin sheets in cold water until soft. Set aside.

  • In a medium saucepan, heat milk, heavy cream, and sugar until simmer (do not boil). Remove from the heat.

  • Squeeze gelatin to remove any excess water and add it to the pan, stirring constantly until the gelatin is melted.

    Could you use a packet of gelatine for this recipe instead of a sheet? I’ve looked all over and can’t find gelatine sheets. How should I do that?

    1. Hi Mel, 你好,Mel,

      As a general rule, 1 (0.25 oz.) packet of granulated gelatin = 1 tablespoon powdered gelatin = 3 sheets leaf gelatin. It means 1 sheet leaf gelatin is about 1 teaspoon powdered gelatin. This should be a fairly safe substitution ratio.
      通常情况下,1 包(0.25 盎司)颗粒状明胶等于 1 汤匙粉末状明胶等于 3 片叶状明胶。这意味着 1 片叶状明胶大约等于 1 茶匙粉末状明胶。这个替换比例应该是相当安全的。

      To use granulated gelatin, place cold water in a small bowl and sprinkle with gelatine while whisking with a fork. Set aside for 5 minutes or until spongy. Then, you can add the bloomed gelatine once your cream mixture is hot.

    1. Hi, Katrina. I am not sure about that because I don’t understand how to calculate calories. One thing for sure is that a serving (I use 150 ml mold) is more or less about 1/2 cup (120ml).
